How all gingernuts SHOULD BE

150g butter 

2/3 cup brown sugar 

1/3 cup caster sugar 

3cm ginger, finely grated (sub with 1 tbs ginger powder)

1/3 cup chunky peanut butter 

1 egg 

1 tsp vanilla bean paste 

1 1/2 cups (225g) plain flour

1/2 tsp baking powder 

1/4 tsp bicarb powder

1 tbs milk 

1/3 cup roasted salted peanuts, finely chopped, plus extra for topping

sliced crystallised ginger for topping 

Preheat oven to 180 and grease and line 2 baking trays

Place butter in the microwave to melt/soften. Add sugars, and ginger, and mix to combine. Add the peanut butter, egg and vanilla and mix to combine. Add remaining ingredients and mix to create cookie dough. Use wet hands to form into round 1/3 cup balls and press onto lined trays. Scatter with crystallised ginger and extra peanuts. Bake for 12 minutes or until golden. Cool on trays and eatttt.
