2 Packham green pears grated
1 egg
1 cup buttermilk
1 cup self-raising flour
1 tsp vanilla bean paste
1 tsp baking powder
2 tbs maple syrup, plus extra to serve
50g butter, chopped
Spiced pears
2 Packham green pears, cored and chopped
2 tbs caster sugar
Pinch of ground cinnamon
Splash of black tea, (sub with water)
For the batter place all ingredients, except the butter, in a large bowl and whisk to combine. Stand until required.
For the spiced pears heat butter in a nonstick frypan over high heat. Add pear, sugar, and cinnamon and toss to coat. Then cook, without stirring, for 5 minutes or until golden. Add tea and bring mixture to the boil. toss to coat and reduce then transfer to a bowl.
Return pan to heat with some of the butter. Working in batches, use a 1/2 cup measure to add portions of pancake batter to the pan and cook for 1-2 minutes each side or until cooked through and golden. Transfer to a plate and keep warm. Continue with the remaining batter.
Serve #Pearcakes with spiced pears and drizzle with extra maple.
