150g unsalted butter, chopped
1/2 cup (125g) brown sugar
5 dried dates (30g), finely chopped
2 tsp vanilla bean paste
1 egg
1 cup (150g) self-raising flour
1 cup (100g) quick oats
200g dark chocolate buttons/ chips
salt flakes
Preheat the oven to 180. Line a baking tray with baking paper.
Melt butter in a large frypan over medium heat. Continue to cook until foaming and nut brown. Add sugar, dates and vanilla and mix to combine. Remove from heat whisk through egg and add then the remaining ingredients, the chocolate will melt slightly this is good!!
Transfer dough to prepared tray and press out using another sheet of baking paper to create a smooth 5mm thick piece. Remove top layer of paper and scatter with salt flakes. Bake for 10-12 minutes or until golden. Remove and stand for 5 minutes then use a sharp knife to cut the cookies into shapes while its still warm.
Cool completely on trays and serve.
