MY ONE-PAN #fetapasta

100g marinated feta, and 1/4 cup (60ml) of the marination oil (can sub with olive oil)

1 garlic clove, sliced

1tbs tomato paste

1 cup risoni or orzo pasta

3 punnets (700g) cherry tomatoes

Basil leaves to serve

Preheat oven to 190C. Heat marination oil from the feta in a large oven-proof frypan over medium-high heat and add garlic, tomato paste, pasta, cherry tomatoes, and a good pinch of cracked pepper. Cook, stirring, for 3-4 minutes or until pasta is coated and slightly toasted. Add 2 cups (500ml) water and bring to a simmer. Crumble over the feta and transfer to the oven, positioning it towards the top, and bake for 15 minutes or until pasta is cooked through. Stand for 5 minutes to rest then mix to combine and serve scattered with basil leaves.
