Banana Muffins

2 cups (300g) self-raising flour

1/2 cup (110g) caster sugar

1 tsp baking powder

80g butter, chopped

2 bananas

1/4 cup (60ml) maple syrup

1/2 cup Greek-style yoghurt

2 eggs

1/2 tsp ground cinnamon

1 tsp vanilla bean paste or extract

1/4 cup (60ml) olive oil

1/4 cup (60ml) milk

Preheat oven to 180C. Line a muffin pan with muffin cases.

Place the flour, sugar, baking powder and butter in a wide bowl and use fingertips to smoosh into the flour and create a breadcrumb texture. It’s ok to have some bigger chunks this is good.

Push flour mixture to the edges of the bowl and make a large well in the centre. Add bananas and mash with a fork. Add maple, yoghurt, eggs, cinnamon, vanilla, olive oil and milk and mix wet ingredients to combine. Incorporate the dry ingredients to create a smoothish (some chunks of butter is fine) batter. Divide between muffin cases and bake for 15 minutes or until puffed and brown.

Cool in cases and serve.
