BBQ’d PRawn and pesto pasta

20 prawns, butterflied

1/3 cup olive oil

4 garlic cloves, thinly sliced

1 tsp chili flakes

1 tsp crushed fennel seeds

finely grated zest and juice of 1 lemon

1/2 cup homemade pesto see https://www.mofmof.space/recipes/iceicepesto (or sub with store-bought)

Finely grated parmesan to serve

My go-to for Fresh Pasta

400g flour

4 eggs

2tsp olive oil

2tsp tomato paste

To make the pasta place flour on a clean workbench. Make a well in the center and add the remaining ingredients. Use a fork to whisk and slowly combine wet ingredients into the flour until the mixture is roughly combined. Then use hands and knead the dough for 5 minutes or until a smooth ball forms. split into two then wet hands and use to smooth out the edges. Wrap in plastic and chill for 2 hours.

Meanwhile toss prawns, oil, garlic, chilli, fennel and zest in a bowl and chill to marinate.

To roll out the dough, on a lightly floured work surface using a rolling pin to roll out pieces of dough into sheets. pass through the thickest setting of your pasta machine. place on a workbench and bring the bottom of the sheet to the centre of the dough and the top over the top of that. Roll out once more with a rolling pin and pass again through the paste machine, do this until you can see the pasta is smooth and shiny. then run through the machine to the thinnest setting. Hand-cut pasta by folding it onto itself or use a pasta cutter attachment to cut the pasta into the shape you wish to use.

Heat a bbq or chargrill pan and bring a large saucepan of salted water to the boil. Add prawns to bbq, shell side in contact with bbq, and cook for 6 minutes or until flesh is white and cooked through. Transfer to a plate. and add pesto.

Add pasta to boiling water and cook for 1-2 minutes or until it rises to the surface. Drain RESERVING 1/2 cup of pasta water. And refresh under cold water. Return pasta water and prawns to pot over high heat and bring to the boil. Stir through pasta, lemon juice and lots of fresh parmesan cheese. Season to taste with cracked pepper and salt and serve immediately.
