Xmas ICECREAM
2L vanilla ice cream, sliced
1/2 cup cherries, pitted and halved
100g your choice of chocolate, chopped
6 fruit mince tarts, chopped and crushed
1/2 punnet strawberries, chopped
2tbs jam of choice
1/2 cup pistachios or any nut, finely chopped
CHOC sauce
1/2 cup brown sugar
1 cup cream
100g butter
2 heaped tbs cocoa
Slice ice cream and place in a large bowl with the remaining ingredients. Mix roughly to combine then transfer back to the icecream container. Freeze overnight.
For the choc sauce place all ingredients in a saucepan over medium heat and bring to the boil. Stir to combine and reduce heat to low. Simmer for 5 minutes then stand until required.
To serve scoop ice cream and drizzle with chocolate sauce. Scatter with more berries and serve immediately.
