1 boneless lamb shoulder
2 brown onion, thickly sliced
2 cans beans, rinsed and drained (kidney beans or black beans are good here)
1/4 cup smokey bbq sauce
1/4 cup tomato paste
1 sachet taco seasoning (approx. 2 tbs)
1 cup apple juice
Jalapeno Slaw:
1/4 cabbage, shredded
1 carrot, shredded
1 tomato chopped
1/4 cup pickled jalapenos and 2 tbs pickle juice
juice of 1/2 lime and remaining wedges to serve
Preheat your oven to 150C
Place all ingredients, except the apple juice, in a large roasting tray and mix and rub into lamb. Add juice. cover in baking paper and foil and roast for 5-6 hours or until lamb meat easily pulls away.
meanwhile, for the slaw combine all ingredients and chill to pickle slightly.
Pull lamb and toss through cooking juices. Serve with slaw and tortillas
