50g butter, chopped
4-5 pears or apples, peeled and chopped
Good drizz of Golden syrup (probs 1/4 cup)
Zest of 2 lemons
pinch of cinnamon
1/4 cup tahini
1x can peaches IN JUICE (check the label)
CRUMB
2/3 cup (100g) plain flour
1/3 cup shredded coconut
1/3 cup rolled oats
1/3 cup caster sugar
100g butter, chopped
1/3 cup pistachios, chopped, plus extra to serve
Cream to serve
Preheat your oven to 220C.
Place butter in a shallow oven-safe baking dish. Add apples and toss with zest and cinnamon. Dollop over tahini and drizzle with golden syrup. Transfer to the oven to cook for 5-10 minutes or until slightly golden.
Meanwhile, prepare the crumb. Place all ingredients in a bowl and use fingertips to smoosh and combine into a crumb.
Remove apples from oven and add tinned peaches and liquid. Gently stir then scatter with crumble mixture.
Reduce oven to 160C and cook for 40-45 minutes or until golden and crisp.
Scatter with extra pistachios and serve with cream!
