Slow cooker STONE fruit
1kg Stone fruit of choice (I used peacharines and apricots)
1/2 cup (110g) caster sugar
spices — i used a cinnamon quill and star anise
Use a knife to make a cut around the stone of the fruit but leaving the fruit intact. (this will help them keep their shape as they cook) Place everything in a slow cooker with 2 cups of water and SET AND FORGET on low for 8+ hours. The next day use tongs or fingers to squeeze and remove the skins and Voila!. serve with all the cooking liquid. I leave mine on overnight and the fruit is perfect the next morning for breakfast, on top of pancakes or smooshed on top of toast.
